Description

This Thai Shrimp Soup is a comforting dish combining rich coconut milk and fresh ingredients, ready in just 30 minutes!


Ingredients

  • 2 tablespoons Avocado oil (or olive oil)
  • 2 cloves Garlic (freshly minced)
  • 1 medium Onion (diced)
  • 1 tablespoon Fresh ginger (minced)
  • 1 stalk Minced lemongrass
  • 2 tablespoons Red curry paste
  • 4 cups Chicken broth (or vegetable broth)
  • 1 tablespoon Fish sauce
  • 1 can Full fat coconut milk
  • 1 cup Fresh shiitake mushrooms (sliced)
  • 1 pound Medium shrimp (peeled and deveined)
  • 1 teaspoon Lime zest
  • 2 tablespoons Lime juice
  • to taste Sea salt
  • 1/4 cup Cilantro (fresh, for garnish)
  • 2 stalks Scallions (sliced)

Instructions

  1. Heat the oil in a large stock pot over medium heat until shimmering. Add diced onion and cook until fragrant, about 2-3 minutes. Then, add garlic, ginger, lemongrass, and red curry paste, cooking for one minute.
  2. Pour in the chicken or vegetable broth and stir continually. Mix in the fish sauce and let the soup simmer for 10 minutes.
  3. Slowly pour in the coconut milk while stirring. Add fresh shiitake mushrooms and cook for about 5 minutes until tender.
  4. Add the peeled and deveined shrimp, cooking until they turn pink, about 5 minutes.
  5. Stir in lime zest and lime juice, seasoning with sea salt to taste.
  6. Ladle the soup into bowls, garnishing with cilantro, scallions, and additional lime wedges. Enjoy!
