Description
This Thai Shrimp Soup is a comforting dish combining rich coconut milk and fresh ingredients, ready in just 30 minutes!

- 2 tablespoons Avocado oil (or olive oil)
- 2 cloves Garlic (freshly minced)
- 1 medium Onion (diced)
- 1 tablespoon Fresh ginger (minced)
- 1 stalk Minced lemongrass
- 2 tablespoons Red curry paste
- 4 cups Chicken broth (or vegetable broth)
- 1 tablespoon Fish sauce
- 1 can Full fat coconut milk
- 1 cup Fresh shiitake mushrooms (sliced)
- 1 pound Medium shrimp (peeled and deveined)
- 1 teaspoon Lime zest
- 2 tablespoons Lime juice
- to taste Sea salt
- 1/4 cup Cilantro (fresh, for garnish)
- 2 stalks Scallions (sliced)
Instructions
- Heat the oil in a large stock pot over medium heat until shimmering. Add diced onion and cook until fragrant, about 2-3 minutes. Then, add garlic, ginger, lemongrass, and red curry paste, cooking for one minute.
- Pour in the chicken or vegetable broth and stir continually. Mix in the fish sauce and let the soup simmer for 10 minutes.
- Slowly pour in the coconut milk while stirring. Add fresh shiitake mushrooms and cook for about 5 minutes until tender.
- Add the peeled and deveined shrimp, cooking until they turn pink, about 5 minutes.
- Stir in lime zest and lime juice, seasoning with sea salt to taste.
- Ladle the soup into bowls, garnishing with cilantro, scallions, and additional lime wedges. Enjoy!
