Ingredients

  • 1 cup almond flour
  • 1/4 cup coconut flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 4 large eggs
  • 1 cup unsweetened almond milk
  • 1/4 cup beef drippings or vegetable oil

Instructions

  1. Preheat your oven to 425°F.
  2. Place a 12-cup muffin tin in the oven to heat for about 10 minutes.
  3. In a mixing bowl, combine almond flour, coconut flour, baking powder, and salt. Whisk until well blended.
  4. In another bowl, whisk together the eggs and almond milk until smooth.
  5. Gradually add the wet ingredients to the dry ingredients, stirring until combined.
  6. Let the batter rest for 10 minutes.
  7. Carefully remove the hot muffin tin from the oven and add 1 teaspoon of beef drippings or vegetable oil to each cup.
  8. Pour the batter evenly into the muffin cups, filling each about halfway.
  9. Return the muffin tin to the oven and bake for 20-25 minutes, or until the puddings are puffed and golden brown.
  10. Remove from the oven and serve immediately.
