- 1 cup almond flour
- 1/4 cup coconut flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 4 large eggs
- 1 cup unsweetened almond milk
- 1/4 cup beef drippings or vegetable oil
Instructions
- Preheat your oven to 425°F.
- Place a 12-cup muffin tin in the oven to heat for about 10 minutes.
- In a mixing bowl, combine almond flour, coconut flour, baking powder, and salt. Whisk until well blended.
- In another bowl, whisk together the eggs and almond milk until smooth.
- Gradually add the wet ingredients to the dry ingredients, stirring until combined.
- Let the batter rest for 10 minutes.
- Carefully remove the hot muffin tin from the oven and add 1 teaspoon of beef drippings or vegetable oil to each cup.
- Pour the batter evenly into the muffin cups, filling each about halfway.
- Return the muffin tin to the oven and bake for 20-25 minutes, or until the puddings are puffed and golden brown.
- Remove from the oven and serve immediately.
