Mexican White Trash Casserole transforms simple pantry staples like Doritos, rotisserie chicken, and cream soup into a hearty, crowd-pleasing comfort food masterpiece with layers of crunchy chips, creamy filling, and melted cheese.


Ingredients

  • 1 large bag (45 cups) Nacho Cheese Doritos, crushed
  • 2 cups shredded chicken (rotisserie, leftover grilled, or canned)
  • 2 cups shredded cheese (Cheddar, Monterey Jack, or Mexican blend)
  • 1 can (10.75 oz) cream of chicken soup
  • 1 can (10 oz) Ro’tel tomatoes with green chilies
  • ½ cup sour cream
  • ½ cup milk
  • ½ packet (about 1 tablespoon) taco seasoning
  • Optional: 1 can black beans, drained and rinsed
  • Optional: 1 cup corn kernels
  • Optional: 1 bell pepper, diced
  • Optional: 2-3 jalapeños, diced
  • Optional: ¼ cup fresh cilantro, chopped
  • Optional: 1 small onion, diced

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish
  2. Crush Doritos in a resealable bag, reserving 1 cup for topping
  3. Mix chicken, cream of chicken soup, Ro’tel tomatoes, sour cream, milk, and taco seasoning in a large bowl
  4. Fold in any optional ingredients (beans, corn, peppers) if using
  5. Spread half of crushed Doritos in bottom of prepared dish
  6. Spoon chicken mixture evenly over Doritos layer
  7. Sprinkle 1½ cups cheese over chicken mixture
  8. Top with remaining Doritos and ½ cup cheese
  9. Bake 20-25 minutes until cheese is melted and bubbly
  10. Let rest 5 minutes before serving

Notes

  • Can be assembled 24 hours ahead and refrigerated (add 5-10 minutes to baking time)
  • Mix crushed and larger Dorito pieces for best texture
  • Substitute ground beef or turkey for chicken if desired
