- 1 large bag (4–5 cups) Nacho Cheese Doritos, crushed
- 2 cups shredded chicken (rotisserie, leftover grilled, or canned)
- 2 cups shredded cheese (Cheddar, Monterey Jack, or Mexican blend)
- 1 can (10.75 oz) cream of chicken soup
- 1 can (10 oz) Ro’tel tomatoes with green chilies
- ½ cup sour cream
- ½ cup milk
- ½ packet (about 1 tablespoon) taco seasoning
- Optional: 1 can black beans, drained and rinsed
- Optional: 1 cup corn kernels
- Optional: 1 bell pepper, diced
- Optional: 2-3 jalapeños, diced
- Optional: ¼ cup fresh cilantro, chopped
- Optional: 1 small onion, diced
Instructions
- Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish
- Crush Doritos in a resealable bag, reserving 1 cup for topping
- Mix chicken, cream of chicken soup, Ro’tel tomatoes, sour cream, milk, and taco seasoning in a large bowl
- Fold in any optional ingredients (beans, corn, peppers) if using
- Spread half of crushed Doritos in bottom of prepared dish
- Spoon chicken mixture evenly over Doritos layer
- Sprinkle 1½ cups cheese over chicken mixture
- Top with remaining Doritos and ½ cup cheese
- Bake 20-25 minutes until cheese is melted and bubbly
- Let rest 5 minutes before serving
Notes
- Can be assembled 24 hours ahead and refrigerated (add 5-10 minutes to baking time)
- Mix crushed and larger Dorito pieces for best texture
- Substitute ground beef or turkey for chicken if desired
- Control heat level with mild, medium, or hot Ro’tel
