Ingredients

- 1 1/2 cups all-purpose flour
- 2 teaspoons baking powder
- 2 tablespoons granulated sugar
- 1/2 teaspoon salt
- 1 1/4 cups milk
- 1 large egg
- 3 tablespoons unsalted butter, melted
- 1 teaspoon vanilla extract
- 3/4 cup fresh or frozen blueberries
Instructions
- In a large bowl, whisk together flour, baking powder, sugar, and salt.
- In a separate bowl, mix milk, egg, melted butter, and vanilla extract.
- Pour the wet mixture into the dry ingredients and stir until just combined. Do not overmix.
- Gently fold in blueberries. If using frozen, do not thaw.
- Heat a skillet or griddle over medium heat and lightly grease it.
- Pour 1/4 cup of batter for each pancake and cook until bubbles form on top.
- Flip and cook the other side for 1–2 minutes until golden brown.
- Serve warm with fresh blueberries and maple syrup.
