  • 2 tablespoons Cajun seasoning
  • 1 tablespoon olive oil
  • 4 tablespoons unsalted butter, divided
  • 4 cloves garlic, minced
  • 1.5 cups heavy cream
  • 1 cup grated Parmesan cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 12 oz penne pasta
  • 1/4 cup chopped fresh parsley, for garnish

Instructions

  1. Pat the chicken cubes dry with paper towels. In a bowl, toss the chicken with Cajun seasoning.
  2. Cook penne pasta according to package directions in salted boiling water until al dente. Drain, reserving about 1 cup of pasta water.
  3. While pasta cooks, heat olive oil and 2 tablespoons of butter in a large skillet over medium-high heat.
  4. Add the seasoned chicken to the skillet in a single layer. Cook for 5-7 minutes, flipping halfway through, until golden brown and cooked through. Remove chicken from skillet and set aside.
  5. Reduce heat to medium. Add the remaining 2 tablespoons of butter to the skillet. Once melted, add minced garlic and cook for about 1 minute until fragrant, being careful not to burn it.
  6. Pour in the heavy cream and bring to a simmer. Stir in the grated Parmesan cheese, salt, and pepper. Whisk until the cheese is melted and the sauce is smooth and creamy.
  7. Add the cooked penne pasta and the cooked chicken to the skillet with the sauce. Toss to coat everything evenly. If the sauce is too thick, add a splash of the reserved pasta water to reach desired consistency.
  8. Serve immediately, garnished with fresh parsley.
